How I Got Started
K.U.C was conceived from two aspects of my restaurant experience as an employee and a guest. As an employee I watched the restaurant business switch its focus over the years from the kitchen to the bar. While as a guest in restaurants with family and friends we began to notice our meals becoming more inconsistent when it came to taste and overall quality. Noticing karaoke and live bands becoming the main attractions and food being simply a bi-product, my next step was to ask myself how could I take action and bring the focus back to food! I utilized my years of cooking, training, and managing to extract principles and effective systems that have consistently proven to provide the best results. Three main objectives surfaced; 1. Provide solid systems for cooks to excel in 2. Show managers how to develop cooks 3. Make sure the product is being handled with care from vendor delivery to food service. These concepts apply to start up restaurants or restaurants that have been open for years. No restaurant is immune from the ''busy-ness'' of the industry redirecting your focus.
