Whoopie Pie~ A Favorite of Mine. Jessica and I were just hanging around at the beach, not sure who started the conversation, but we started talking about Whoopie Pies. I don’t remember much about Junior High School, But I do remember stopping at a Variety Store, which was on our way to and from School. The store does not exist anymore but Whoopie Pies do. Back then these pies were about half the size of the ones you can purchase at your local supermarket, and we won’t mention the cost. I will say that we bake them from scratch and they are delicious! The recipe is as follows. Ingredients: 1 cup butter, softened 1-1/2 cups sugar 2 eggs 2 teaspoons vanilla extract 4 cups all-purpose flour ¾ cups baking cocoa ½ teaspoon salt 2 teaspoons baking soda 1 cup water 1 cup buttermilk Filling: 2 cups marshmallow creme 2 cups confectioners’ sugar ½ cup butter, softened 2 teaspoons vanilla extract In a large mixing bowl, beat butter and sugar until light and fluffy. Add the eggs and vanilla; mix well. Combine the flour, cocoa, baking soda and salt; add to creamed mixture alternately with water and buttermilk, beating well after each addition. Drop by teaspoonfulls 2 in. apart onto greased baking sheets. Bake at 375 for 5-7 minutes or until set. Remove to wire racks to cool completely. In a small mixing bowl, beat filling ingredients until fluffy. Spread filling on the bottom half of the cookies, top with remaining cookies. 18- 20 servings. Enjoy !! Maria Brown maria.joinxpress.com
