Low Country Shrimp Boil
Treat yourself, friends, and family to this fun and friendly shrimp boil recipe. Serve it with a loaf of crusty bread and a fresh green salad for a meal that’s sure to impress. (Plus, you can eat it wearing your slippers and stretchy pants. What could be better?)
Ingredients:
1 12-ounce package frozen SeaPak® Shrimp Scampi
2 pounds small red potatoes, washed and quartered
16 oz smoked sausage cut into 16 pieces. We like a spicy Andouille or a mild kielbasa
2 tbsp crab boil seasoning like Old Bay
6 frozen mini corn cobs or 3 fresh ears yellow corn, husked and halved
Directions:
- Place potatoes and sausage in a large pot filled with enough water to cover all the ingredients (about 10 cups). Stir in crab boil.
- Place the pot on high heat and bring the water to a boil. Reduce to medium-low heat and simmer for 20 minutes.
- Add corn and continue simmering for 10 minutes.
- Add frozen shrimp scampi and continue simmering for 3 more minutes or until the shrimp are cooked.
- Drain and pour into a serving dish or dump out onto a paper-covered table.
- Serve immediately.
Italian-Style Shrimp and Grits
This is comfort food at its finest.
Ingredients:
For the shrimp
1 package of frozen SeaPak® Shrimp Scampi
1 Tbsp extra-virgin olive oil
6 oz spicy Italian chicken sausage, cut into ½-inch thick rounds
½ large sliced red onion
2 minced garlic cloves
¾ cup quality canned tomato sauce
¾ cup fresh cherry tomatoes
2 cups fresh baby spinach
For the grits
1 18 oz tube polenta, sliced
½ cup whole milk
½ cup broth, chicken or vegetable
Directions:
- Heat olive oil in a large skillet over medium-high heat. Cook sausage until golden and transfer to a plate with a slotted spoon and set aside.
- Add red onions to the hot skillet and leftover oil and fat along with a pinch of salt. Sauté until lightly golden.
- Add garlic and red pepper flakes and cook 1 minute more.
- Stir in tomato sauce, reduce the heat to medium, and simmer for 5-7 minutes until thickened.
- Add frozen Shrimp Scampi and cook, stirring lightly and occasionally until cooked through, about 5-7 minutes. Stir in spinach leaves and cook until wilted, about 1 minute.
- While the shrimp and tomato sauce is cooking, warm the polenta, milk, and broth over medium heat, using a wooden spoon to break the polenta apart until smooth.
- Spoon cooked grits into a bowl, make a well in the middle, and top with shrimp and sausage.
- Serve immediately.
