The most difficult part for me was changing my eating habits. I taught myself how to make easy healthy meals from several websites such as the American Diabetes Association, My Food Advisor, and NutritionData.com, I enrolled in a 4 night course on diet and nutrition, and began meeting with a nutritionist. I began losing 3 lbs a week and dropped 70 lbs in about 7 months.
Now, don't get the idea that this way of eating is just for diabetics. After many discussions with my nutritionist and the diabetic nurse from the class I learned from them that this is the way we all should eat, whether we have diabetes or not. Many people have come up to me wanting to know how I did it and some have done the same with their eating and have been successful in dropping their weight to a more tolerable level.
