More and more evidence indicates that simple carbohydrates, such as refined grains, pasta, white rice, white flour, white potatoes and white sugar increase total blood triglycerides and decrease the number of ''good'' HDL particles, even though the food might not contain any or very little fat. For some reason, the simple carbs cause the body to produce more LDL (bad) particles.
Therefore, simple carbohydrates would not be on a free list of low cholesterol foods and neither would trans-fatty acids. Trans-fatty acids are synthetic; they do not exist in nature. They were created by man in order to prolong the shelf life of vegetable oils and animal fats. The body lacks an enzyme that allows for trans-fatty acids to be processed efficiently. As a result, the fats stay in the bloodstream for long periods of time, which increases the risk that they will become trapped in the endothelium of the arteries.
